According to Swedish pre-Lenten tradition, all yeast, sugar, and cream must be disposed of prior to the austere pre-Easter fast. Instead of wasting the ingredients, Swedes created this decadent pastry called “semla” which is a cardamom yeast roll made with almond paste, whipped cream, and sugar. Warning: it is nearly a meal in itself.
*Students should bring a bag lunch or snacks to eat during class if not eating before.
About the instructor: LynnAnne Vesper has a long-standing interest in Scandinavian languages and cultures going back to 1984. She speaks Swedish fluently. She has been helping people enjoy the natural world for over 20 years as a guide for canoe and dogsledding trips in the Boundary Waters.
